Chef Khai and the Asian Chef's Association's
Chefs Without Borders raised $118,000 at the
Anti-Human Trafficking Gala on March 21, 2008.
The money will go to prevention work in
education, vocational training and scholarship
for little girls and boys in Southeast Asia
through the Give 2 Asia Foundation.

fresh, flavorful fare is echoed in the eatery's excellent wine
list. Its lengthy and offers a wide selection of fairly priced
wines, well tailored to the Vietnamese cuisine. I respect any
list that delivers half-bottle options (a lunchtime favorite)
and this one does. Don't miss the crisp, off-dry Selbach-Oster
Riesling from Germany ($29, half) or Sonoma star, Merry Edwards,
Pinot Noir ($32, half). Organized by style ranging from aromatic
whites to light reds and Mediterranean blends, you cant go wrong
with any selection. |

Conan O'Brien Show came to San Francisco the week of May 1st,
NBC threw a party at Ana Mandara's Cham Bar.
Conan towered above the crowd, folks posed next to a life-sized
cut-out of him long after he had left. On the last night of the
show on Friday, May 4th, he stated, "Ana Mandara had great food,
great service, the only terrible thing was the dirty water
across the street."

Chef Khai Duong,
executive chef of San Francisco's Ana Mandara restaurant, tells
Chronicle food writer Olivia Wu about how his improvised recipe
for Crispy Skin Salmon turned into his young daughter's favorite
dish. The recipe appears in Wednesday's Food section.
He also talks about his culinary career, starting with his first
Vietnamese restaurant in Massachusetts, and about the
humanitarian group Chefs Without Borders that he founded
initially to assist victims of the December 2004 tsunami.
